Skinny BBQ Chicken Salad

6 Mini Sweet Peppers (red, yellow, and orange), cut into fours
1 Corn on the Cob
1/2 Onion, Cut into thick rings
1 Tbsp Olive Oil
1 Head Lettuce (red leaf or romaine)
1 Chicken Breast, cooked and shredded

2 Tbsp BBQ Sauce
1/4 Cup Low Fat Plain Yogurt


Preheat oven to 350. On a baking sheet place onion, peppers and corn. Drizzle olive oil over. Bake 30 to 40 minutes turning halfway through. Remove and let cool.

In a bowl add the BBQ sauce and yogurt. Whisk together. Place in refrigerator until ready to use.

Take the cooled corn cob and remove the kernels.

In a large bowl add the lettuce, chicken, roasted vegetable, and the dressing. Toss well.

Skinny Pork Chop & Mashed Red Potatoes

Skinny Pork Chop


1 Tbsp Honey
1/2 tsp Garlic powder
1/2 tsp Onion powder
1/4 tsp Mustard Powder
1 tsp Trader Joe’s 21 Seasoning Salute
1/8 tsp Salt
1/8 tsp Ground Pepper
1 1/2 tsp Water
4 Pork Chops (thin cuts)
Cooking Spray


In a bowl mix the first eight ingredients to make a paste.

Spread the paste onto the pork chops and set aside.

Heat a grill pan over medium high heat.

Coat pan with cooking spray.

Add Pork chops; cook on both sides for 2 minutes.

Reduce heat to medium and cook for 5 minutes, or until done.

Remove from pan; and let stand a few minutes.

Skinny Mashed Red Potatoes


4 Red Potato, halved
1/2 C Plain Yogurt
1/2 C Almond Milk
2 Garlic cloves, minced
1 Tbsp Butter
1/8 tsp Salt
1/8 tsp White Pepper


In a large pot boil the potatoes until soft.

Drain and return to pot.

With a potato masher, mash potatoes.

Add the remaining ingredients and blend with a hand mixer or you can use the potato masher to mix and mash the potatoes.

Return to the stove and reheat potatoes, serve immediately.

Skinny (Sloppy) Joes

1/2 Ground Beef
1/2 Small Onions, chopped
1 Celery stalk, chopped
4 Mushrooms, chopped
1/4 tsp Onion Powder
1/4 tsp Garlic Powder
1/2 tsp Mustard Powder
1 tsp Honey
1 tsp Worcestershire Sauce
1/3 Cup Tomato Sauce
1 Tbsp Tomato Paste
1/8 tsp Salt
1/8 tsp Ground Pepper
4 Eating Right Whole Wheat Sandwich Slenders


In a skillet over medium heat, brown ground beef, onion, and celery. Cook for 3 minutes. Add Mushrooms cook for an additional 2 minutes. Drain any liquid.

Stir in garlic powder, onion powder, mustard powder, honey, Worcestershire sauce, tomato sauce, and tomato paste, mix thoroughly. Reduce heat, and simmer for 5 minutes. Season with salt and pepper (if you feel you need it).

Toast sandwich slenders.

Divide meat mixture between the slender bottoms and cover the meat mixture with slender tops.
