Skinny Pork Chop & Mashed Red Potatoes

Skinny Pork Chop


1 Tbsp Honey
1/2 tsp Garlic powder
1/2 tsp Onion powder
1/4 tsp Mustard Powder
1 tsp Trader Joe’s 21 Seasoning Salute
1/8 tsp Salt
1/8 tsp Ground Pepper
1 1/2 tsp Water
4 Pork Chops (thin cuts)
Cooking Spray


In a bowl mix the first eight ingredients to make a paste.

Spread the paste onto the pork chops and set aside.

Heat a grill pan over medium high heat.

Coat pan with cooking spray.

Add Pork chops; cook on both sides for 2 minutes.

Reduce heat to medium and cook for 5 minutes, or until done.

Remove from pan; and let stand a few minutes.

Skinny Mashed Red Potatoes


4 Red Potato, halved
1/2 C Plain Yogurt
1/2 C Almond Milk
2 Garlic cloves, minced
1 Tbsp Butter
1/8 tsp Salt
1/8 tsp White Pepper


In a large pot boil the potatoes until soft.

Drain and return to pot.

With a potato masher, mash potatoes.

Add the remaining ingredients and blend with a hand mixer or you can use the potato masher to mix and mash the potatoes.

Return to the stove and reheat potatoes, serve immediately.

Pork Dip Sandwich

This has to be my families favorite way to use my leftovers from Skinny Slow Cooker Pork Tenderloin.

Pork Dip Sandwich

I don’t have measurements for this sandwich because any amount you want on your sandwich works. Just remember if your watching your weight you may want to hold back on the amount of pork and/or cheese you use. You can also use a whole grain sourdough with this.


Julienne the peppers and onion and saute with a tad of grapeseed oil or olive oil.
Take your sourdough bread and scoop out the inside.
Fill with leftover pork.
Top with the grilled peppers and onion.
Sprinkled with the shredded cheese.
Toast under a broiler, until nice and toasted. Keep an eye on it. Some broilers toast quickly.
Heat the Au Jus in a sauce pan.
Pork Dip Sandwich without the cheese. A little healthier and just as yummy

Skinny Slow Cooker Pork Tenderloin

This full of flavor pork recipe is the perfect dish to make when you don’t have time to slave over the stove. Throw all the ingredients in your slow cooker and in 4 hours… voila. I like to serve this with my Skinny Mashed Potatoes, they go so well with the Au jus.

1 pound pork tenderloin

1/4 cup dried onion flakes

1 1/4 cup low-sodium beef broth

1/4 teaspoon onion powder

1/4 teaspoon parsley flakes

1/8 teaspoon celery seed

1/8 teaspoon paprika

1/8 teaspoon pepper

1/2 cup red wine

3 tbsp minced garlic

3 tbsp low sodium soy sauce

ground pepper to taste

Place all the ingredients besides the pork in the slow cooker and stir. Place the pork in the slow cooker. Cook for 4 hours on the low setting.
