Skinny Corn Chili

Ingredients

1/2 pound Lean Ground Beef
1/2 Onions, chopped
1 – 15 oz can crushed tomatoes
1 – 15 oz can Corn
1 – 15 oz can Kidney Beans
1 tsp Trader Joe’s 21 Seasoning Salute
1/8 tsp Paprika
1/8 tsp Chili Powder
1/8 tsp Cayenne Pepper
1/8 tsp Garlic powder
1/8 tsp Onion powder
1/4 tsp Salt
1/4 tsp Ground Pepper

Directions

Brown ground beef in a large pan over medium high heat. Because you are using lean ground beef you will not need to drain the oil from the pan. If you don’t use lean ground beef drain the oil.

Add the chopped onions to the pan. Cook until onions are soft. Add remaining ingredients and cook over low heat for 20 minutes stirring occasionally.

Skinny Cucumber Tea Sandwich

Ingredients

2 Whole Wheat Bread
4 Cucumber Slices, cut in half

2 Tbsp Greek Yogurt Cheese
1 Tbsp Fresh Chives, chopped
pinch of salt (or more to taste)
pinch a ground pepper (or more to taste)

Directions

Slice cucumber and place on paper towel.

In a small bowl combine yogurt cheese, chives, salt and pepper.

Spread the yogurt cheese evenly between bread. Top two of the bread slices with the cucumber slices, then the remaining bread slices. Cut the crust off and slice diagonally.

To Make Yogurt Cheese

Line a colander with several layers of cheese cloth and set over a bowl. Add 1 cup yogurt, cover with plastic wrap and place in refrigerator. Let drain for 12 to 48 hours (depending on the consistency you desire).

Skinny Chicken Fingers

Ingredients

3 Boneless Chicken Breast, skin removed, cut into 4 strips
1/2 Cup Yogurt, plain, low fat
2 Tbsp Spicey Brown Mustard
1 Cup Panko
2 Tbsp Shredded Parmesan Cheese
1 Tbsp Trader Joe’s 21 Seasoning Salute
1/4 tsp. ground pepper
Olive oil cooking spray

Directions

Pre-heat oven to 450.

In a small bowl add yogurt and mustard, stir well.

In a shallow dish add planko, shredded parmesan, 21 salute seasoning, and ground pepper.

Coat each strip with the yogurt and then cover with the planko mixture.

Place chicken on a olive oiled sprayed cookie sheet and cook on each side 10 – 15 minutes each side or until golden brown and no longer pink inside.

Serve with your favorite low fat/low calorie dipping sauce.

Serving Size: 4 – 3 pieces each
