French Roast Balsamic Marinade

This has to be the best marinade I’ve had in a long time. My family raved about it too, so it’s a keeper. This recipe comes from Lyn-Genet’s The Plan Cookbook. I marinated the meat for two days, which made the meat melt in your mouth.

French Roast Balsamic Marinade

• 1/2 cup strong french roast coffee

• 4 tbsp balsamic vinegar

• 2 tbsp dark brown sugar

• 2 tbsp extra virgin olive oil

• 3 cloves chopped garlic

• Fresh black pepper to taste

• 1/4 teaspoon sea salt

In a zip lock bag combine all ingredients and mix well. Add you meat and marinade.

Skinny Corn Chili

Ingredients

1/2 pound Lean Ground Beef
1/2 Onions, chopped
1 – 15 oz can crushed tomatoes
1 – 15 oz can Corn
1 – 15 oz can Kidney Beans
1 tsp Trader Joe’s 21 Seasoning Salute
1/8 tsp Paprika
1/8 tsp Chili Powder
1/8 tsp Cayenne Pepper
1/8 tsp Garlic powder
1/8 tsp Onion powder
1/4 tsp Salt
1/4 tsp Ground Pepper

Directions

Brown ground beef in a large pan over medium high heat. Because you are using lean ground beef you will not need to drain the oil from the pan. If you don’t use lean ground beef drain the oil.

Add the chopped onions to the pan. Cook until onions are soft. Add remaining ingredients and cook over low heat for 20 minutes stirring occasionally.

Skinny (Sloppy) Joes

Ingredients

1/2 Ground Beef
1/2 Small Onions, chopped
1 Celery stalk, chopped
4 Mushrooms, chopped
1/4 tsp Onion Powder
1/4 tsp Garlic Powder
1/2 tsp Mustard Powder
1 tsp Honey
1 tsp Worcestershire Sauce
1/3 Cup Tomato Sauce
1 Tbsp Tomato Paste
1/8 tsp Salt
1/8 tsp Ground Pepper
4 Eating Right Whole Wheat Sandwich Slenders

Directions

In a skillet over medium heat, brown ground beef, onion, and celery. Cook for 3 minutes. Add Mushrooms cook for an additional 2 minutes. Drain any liquid.

Stir in garlic powder, onion powder, mustard powder, honey, Worcestershire sauce, tomato sauce, and tomato paste, mix thoroughly. Reduce heat, and simmer for 5 minutes. Season with salt and pepper (if you feel you need it).

Toast sandwich slenders.

Divide meat mixture between the slender bottoms and cover the meat mixture with slender tops.
