Sweet Balsamic Tomato Bruschetta & Caramelized Onion and Pepper Bruschetta

Sweet Balsamic Tomato Bruschetta

Ingredients

1 1/2 – 2 Plum Tomato, chopped
1 Garlic Clove, minced
2 Tsp Olive Oil, 1 tsp for bruschetta dressing and 1 for the baguette slices
1 Tbsp Balsamic Vinegar
1/2 tsp Honey
1/8 tsp Salt
1/8 tsp Black Pepper
1/2 Multi Grain Baguette, cut into 16 slices

Directions

Place the first seven ingredients in a bowl. Stir to coat and set in refrigerator to marinate.

Heat a grill pan over medium high heat. Take the baguette slices and brush with olive oil on both sides and place on a heated pan. Once grill marks are made turn over bread over to grill the other side. Remove once that side has grill marks.

Place a scoop of the tomato mixture onto each slice of bread and enjoy.

Caramelized Onion and Pepper Bruschetta

Ingredients

3 Sweet Mini Peppers, sliced
1/2 Onions, sliced
2 Tsp Olive Oil, (1 tsp for the grilling of the peppers and onions and the other for the baguette slices)
1/2 Multi grain Baguette, cut into 16 slices
1/2 cup Farmers Cheese

* Optional seasoning to season the farmers cheese.

Onion and/or garlic powder
salt and pepper

Directions

In a fry pan heat 1 tsp of the olive oil. Add sliced peppers and onion. Cooked until soft and translucent. Remove from heat and set aside.

Heat a grill pan over medium high heat. Take the baguette slices and brush with olive oil on both sides and place on a heated pan. Once grill marks are made turn over bread over to grill the other side. Remove once that side has grill marks.

If you want to season your farmers cheese do so now.

Add 1/2 tbsp of farmers cheese to each toasted baguette slices and then top with the caramelized onions and peppers. Place under a broiler or a toaster over for a few minutes.

I found the Dark Chocolate Chip Oatmeal Cookie Dough Balls on the net and then played around with it and came up  with Macadamia Chocolate Chip Cookie Dough Balls. Both really good.

Dark Chocolate Chip Oatmeal Cookie Dough Balls

Ingredients

1 1/3 Cups Almonds, ground
1 1/3 Cups Walnuts, ground
1 1/3 Cups 100% Whole Grain rolled oats (oatmeal), ground
1/2 tsp Ground Cinnamon
1.4 tsp salt
1/2 cup agave
1 Tbsp Vanilla Extract
6 Tbsp Dark Chocolate Chips

Macadamia Dark Chocolate Chip Cookie Dough Balls

Ingredients

1 1/3 Cups Almonds, ground
2/3 Cups Macadamia Nut, ground
2 Cups 100% Whole Grain rolled oats (oatmeal), ground
1/2 tsp Ground Cinnamon
1.4 tsp salt
1/2 cup agave
1 Tbsp Vanilla Extract
6 Tbsp Dark Chocolate Chips

    If the nuts and rolled oats are not ground do so now with a food processor.

    In a mixer add the ground nuts and oats add the remaining ingredients (saving the chocolate chips for last) and mix for about a minute. Add the Chocolate chips and continue mixing for a couple of seconds.

    Rolls 1 Tbsp balls and place on a lined baking sheet place in freezer for 30 minutes. Store in an airtight container in your freezer.

     

Skinny Taco Salad

My all time favorite Taco Salad. I love it with a thousand Island Dressing. Here I’ve cut the calories down by swapping yogurt for the mayo. Taste just as good, if not better.

 

 

Ingredients

 

1/2 Pound Ground beef, extra lean
1/2 Cup Water
1/2 Tbsp Taco Seasoning
1 Head of Lettuce, red leaf or romaine, cut into bite size pieces
1 Tomatoes, chopped
1/2 Onions, chopped
1 can (15 oz) of Kidney Beans
3 Sweet Mini Peppers
2 Ears of Corn, roasted, then kernels removed
1/2 Cup Cheddar Cheese, shredded
1 Avocados, chopped

4 Tortilla Chips, Crushed (optional)

DRESSING
1/2 Cup Yogurt, plain, low fat
2 Tbsp Ketchup

Directions

Brown the ground beef in a large skillet over a medium high heat. Once browned add water and taco seasoning. Cook until water has evaporated. Remove from heat and let cool for a few minutes.

In a large bowl add the remaining ingredients and toss well.
