Dark Chocolate Banana Bite Pops

6 oz. Dark Chocolate, Chopped
2 Tbsp Coconut Oil
3 Bananas


Slice the bananas into 8 slices per banana. Stick each banana slice with a toothpick or popsicle stick. Place on a foil lined cookie sheet. Place in freezer.

Melt chocolate with the coconut oil in a double broiler. Once melted remove from heat at let cool.

After the bananas are completely frozen and chocolate cooled dip the banana pieces into the chocolate, hold over the bowl until the chocolate hardens, replace onto cookie sheet. Repeat until all the bananas have been dipped into the chocolate. Return to freezer until ready to enjoy.

Skinny Pork Chop & Mashed Red Potatoes

Skinny Pork Chop


1 Tbsp Honey
1/2 tsp Garlic powder
1/2 tsp Onion powder
1/4 tsp Mustard Powder
1 tsp Trader Joe’s 21 Seasoning Salute
1/8 tsp Salt
1/8 tsp Ground Pepper
1 1/2 tsp Water
4 Pork Chops (thin cuts)
Cooking Spray


In a bowl mix the first eight ingredients to make a paste.

Spread the paste onto the pork chops and set aside.

Heat a grill pan over medium high heat.

Coat pan with cooking spray.

Add Pork chops; cook on both sides for 2 minutes.

Reduce heat to medium and cook for 5 minutes, or until done.

Remove from pan; and let stand a few minutes.

Skinny Mashed Red Potatoes


4 Red Potato, halved
1/2 C Plain Yogurt
1/2 C Almond Milk
2 Garlic cloves, minced
1 Tbsp Butter
1/8 tsp Salt
1/8 tsp White Pepper


In a large pot boil the potatoes until soft.

Drain and return to pot.

With a potato masher, mash potatoes.

Add the remaining ingredients and blend with a hand mixer or you can use the potato masher to mix and mash the potatoes.

Return to the stove and reheat potatoes, serve immediately.

Skinny (Sloppy) Joes

1/2 Ground Beef
1/2 Small Onions, chopped
1 Celery stalk, chopped
4 Mushrooms, chopped
1/4 tsp Onion Powder
1/4 tsp Garlic Powder
1/2 tsp Mustard Powder
1 tsp Honey
1 tsp Worcestershire Sauce
1/3 Cup Tomato Sauce
1 Tbsp Tomato Paste
1/8 tsp Salt
1/8 tsp Ground Pepper
4 Eating Right Whole Wheat Sandwich Slenders


In a skillet over medium heat, brown ground beef, onion, and celery. Cook for 3 minutes. Add Mushrooms cook for an additional 2 minutes. Drain any liquid.

Stir in garlic powder, onion powder, mustard powder, honey, Worcestershire sauce, tomato sauce, and tomato paste, mix thoroughly. Reduce heat, and simmer for 5 minutes. Season with salt and pepper (if you feel you need it).

Toast sandwich slenders.

Divide meat mixture between the slender bottoms and cover the meat mixture with slender tops.
